Hi everyone!
I had Singapore style chicken dish that is called Hainanese chicken rice last week. It was super tasty so I decided to make it at home. It is usually served with rice. The sauce was very deep and the chicken was very tender and no chicken smell at all. If it is interested to you, then please try to cook it at home. You would love it!

Serving Size: 2 people
INGREDIENTS:
- 400g Chicken Breast or Thigh
- 1L Water
- 1 tbsp Ginger
- 1 Green Onion
- 1 tbsp Chicken Stock
- 1 tbsp Whole Peppercorn
Sauce:
- 5 tbsp Vegetable Oil
- 1 Green Onion
- 1/4 Onion
- 1 tbsp Ginger
- 3 Garlic Clove
- 1/2 tbsp Fish Sauce
- 3 tbsp Soy Sauce

DIRECTIONS:
1. Cook the chicken:
- In a large sauce pot, add 1L of water, the sliced green onion, sliced ginger, peppercorn, and chicken stock. Bring it to a boil on high heat.

- When the water is boiling, add the washed chicken. Cook it for 30 minutes.

- While the chicken is cooking, prepare the sauce and ice bath.

2. Make the sauce:
- In a large frying pan, add the oil and all the vegetables. Turn on the medium heat and cook it for about 30 minutes until the vegetables turns to brown.


- Transfer the vegetables and oil on an individual plate. Add the fish sauce and soy sauce and stir. Separate the vegetables and sauce. Put the sauce on a small plate. You will spread it on the top of the chicken.

3. Cool the chicken down:
- Put the cooked chicken into the prepared ice bath for 10 minutes. This processing will make your chicken more tender.

- After 10 minutes, transfer the chicken on a cutting board and slice it.

- Transfer it on an individual plate and spread the sauce on the top.
