In this post, I wanted to share a recipe for soup that is mixed with vegetables, imitation crab, and egg. It is very simple and fast to make. This dish usually serves as an appetizer soup when you go to a traditional Chinese restaurant in South Korea. It is a very soft, but deep soup. This is also great for a person who gets a fever. I recommend you cook it at home if you want to make any simple and easy soup.

Serving size: 2 people
Ingredients:
- 400 mL Water
- 2 Imitation Crab Meats
- 2 Eggs
- 1 tsp Minced Ginger
- 1 tbsp Soy Sauce
- 1 tbsp Cooking Wine
- 1 tbsp Sesame Oil
- 1 tsp Chick Stock Powder or 1/2 cup of Chicken Broth
- Starch Mixture: 1 tbsp Potato Starch + 100 mL Water
- 1 Scallion
- 2~4 Green Peppers (Optional)
- 1/2 Enoki Mushroom (Optional)

Directions:
1. Prep vegetables and toppings:
- Thin slice scallion and green peppers.

- Cut down the root of the Enoki mushroom.

- Mince ginger if you need it.
- Tear the crab meats with your hands.
- Beat the eggs in a cup.
2. Start cooking soup:
- In a medium sauce pot, add 1~2 tsp vegetable oil and warm on medium-high heat.

- Add the minced ginger and stir; cook for about 1~2 minutes.

- Add the cooking wine and cook for about 1~2 minutes.

- Add 400mL of water.

- Add the chicken stock powder soy sauce, mushroom, and crab meats.

3. Make the potato starch mixture:
- While the soup is boiling, in a cup, add 100 mL of water and 1 tbsp of potato starch.
- Mix well.

4. Add the mixture:
- Add the starch mixture into the boiling soup divided by 3 times.

- Add the beaten eggs to the soup.

- Add the sesame oil.

- Stir the soup well and cook for about 5 minutes more.
5. Serve:
- Transfer the soup onto individual bowls.
- Add the scallion and green peppers as garnish.

- Enjoy!
