Hi everyone!
I would like to share a recipe of Sunbasket, called “Burmese Salmon Salad with Lemongrass, Cabbage, and Apple”. It is 2 serving size portion, gluten-free, Mediterranean, dairy-free, soy-free, diabetes-friendly, and low carb. To be honest, I didn’t really right this meal kit because flavor of cabbage was not that good and salmon was so so. It was the worst recipe from Sunbasket. I would recomend you changing the cabbage to lettuce. I just posted it just in case if you may like it haha. Let’s get it!

Ingredients:
2 tbsp Coriander Seeds
2 Tail Cuts of Skinless Salmon Fillets
1 1/2 tsp Beet Powder
1 Organic Lemon
Half of Cabbage
1 Organic Apple
Lemongrass Paste (Lemongrass + Extra Virgin Olive Oil + Garlic + Ginger + Turmeric)
1 tbsp Black Sesame Seeds
1 tsp Red Chile Flakes (Optional)
Directions:
1. Prep and cook the fish
- Crush the coriander seeds.
- Pat the fish dry with a paper towel. Season with salt and pepper, and sprinkle with the crushed coriander and beet powder.

- In a large frying pan over medium heat, warm 1~2 tbsp of oil until hot.

- Add the salmons and cook until lightly browned on the bottom side for about 4 minutes, and turn and cook for about 3 minutes.


2. Make the salad
- Juice half the lemonm cut the remaining half into wedges for garnish.
- Cut away any core from the cabbage and coarsely chop the cabbage.

- Core and thinly slice the apple.

- In a large bowl, stir together the lemongrass paste, sesame seeds, 1 tbsp of lemon juice, 1 tbsp of olive oil, and as many chile flakes as you like. Add the cabbage and apple and toss to coat. Season to taste with salt and pepper.


3. Serve
- Transfer the salad to individual plate or bowl and top with the salmon. Serve with the lemon wedges.


What I liked:
- It was very simple and quick to cook. It took me about 20 minutes. If you want somthing simple and quick to cook, it would be a great option.
- Apple was very juicy, sweet, and crispy. It was the best part from the dish.
What I disliked:
- I had no idea what’s point of the beet powder and coriander seeds. I couldn’t taste any flavor from it. I think they add the beet powder for color, but what is point of it? It seems wasting my money to be honest haha. I recommend you not buy the beet powder and also buy other herbs instead of the coriander seeds or just salt and pepper would be fine.
- Flavor of cabbage was pretty bad… It would really hard to finish all the cabbages. I felt it is healthy, but definitely not recommending haha. I recommend you add lettuce instead.
