[MEAL KIT] Lemongrass meatballs with spinach-plum salad and cashews

Hi all,

I would like to share a recipe of Sunbasket that I ordered with you. Today’s menu is lemongrass meatballs with spinach-plum salad and cashews, Gluten-free, Mediterranean, Dairy-free, Soy-free, Diabetes-friendly, and Carb-conscious. Its cooking time is about 20-30 minutes, pretty simple cooking. I suggest you follow the recipe and pretty sure you are going to enjoy it:) Okay, let’s get it!!

Ingredients:

  • 3 Organic Scallions
  • Ground Chicken
  • Lemongrass Paste (Lemongrass, Extra Virgin Olive Oil, Garlic, Ginger, Turmeric)
  • 1 Organic Plum
  • 3 tbsp Dry-Roasted Cashews
  • 5 oz Organic Baby Spinach
  • Asian Sesame Dressing (Almond Butter, Coconut Amions, Toasted Sesame Oil, Apple Cide Vinegar)

Methods:

1. Prep the meatballs

  • Trim the root ends from the scallions, thinly slice it, and separate the white parts and green parts.
  • In a medium bowl, combine the ground meat, lemongrass paste, and white parts of the scallions. Season with salt and pepper. Mix them well and form the mixture into meatballs. (It came out 6 meatballs for me)

2. Cook the meatballs

  • In a large frying pan over medium-high heat. warm 1 to 2 tbsp of oil. Add the meatballs and cook for about 4-5 minutes per side until it turns to brown color.

3. Make the spinach-plum salad

  • Cut the plum in half and remove the pit; slice the fruit.
  • Crush the cashews, will be using as a garnish.
  • In a large bowl, toss together the spinach, plum, and Asian sesame dressing. Season with salt and pepper.
  • Serve with the salad, meatballs, green parts of scallions, and cashews.

Overall Rating:

The salad was green and fresh! The meatballs were okay, but I would add more lemongrass paste and I think ground beef or chicken thigh would be more tasty than chicken. Beef meatballs would be more juicy and soft. The chicken meatballs were puffy. If you like a puffy meat, you will like it, but I don’t haha. The meatballs’ flavor was a kind of boring so I dipped it in soy sauce that made it better. I recommend you trying it with soy sauce.

Rate: ⭐⭐⭐ out of 5; if the flavor of lemongrass was stronger, I would give more stars.
